Steps to make Funfetti Cake
- Preheat oven to 350°F. Spray a 9" cake pan with non-clam spray and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set it aside.
- Whisk the sugar and cocoa butter in a large bowl. Just make sure you get the right amount of sugar, it's going to be a serious mix. Then add the eggs, yogurt, milk and vanilla extract to the mixture.
- Mix gently until the dry ingredients are submerged in the water, until everything is combined and there are no lumps. Mix the splashes gently, but be careful not to mix them, because if you do, the splashes will start to stain the blood.
- Pour the batter into the prepared cake pan. Bake for about 20 minutes, remove from the oven and cover with aluminum foil. Return the baking sheet to the oven and continue to bake for 13-17 minutes or until the center inserts come out clean. When this is done, let the cake cool completely before frosting it.
- For frosting, beat butter on medium speed with a hand mixer or stand mixer. Blend until smooth and creamy. Add powdered sugar, cream, vanilla extract and salt as you go. Turn on high speed and mix for about 3 minutes. Start with 3 cups of powdered sugar and add more if needed to thicken the icing. If the frosting needs to be thinned, add more cream.
- When the cake has completely cooled, freeze it and decorate with other ingredients if desired. Then you are ready to share and serve.
- Place the covered cake in the refrigerator or at room temperature for up to 5 days.
